Sushi “Zabōu”

Fusion of Masterful Skills and Tango’s Seasonal Seafood
With 15 years of experience at Michelin-starred restaurants in New York and Los Angeles, and two years at prestigious establishments in Tokyo’s Roppongi, skilled chef Yoichi Akashi brings authentic Edo-style sushi to life using the rich, freshly caught seafood of the Tango Peninsula.
At this intimate 8-seat counter, guests can take their time to savor sushi crafted with confidence and precision.

Chef Yoichi Akashi’s Exceptional Technique
Akashi’s sushi reflects meticulous Edo-style craftsmanship, drawing on his deep knowledge of seafood—a style highly acclaimed by gourmet enthusiasts and connoisseurs alike.
Based in Miyazu City, Kyoto Prefecture, his creations showcase the bounty of local Tango seafood, red vinegar, premium rice, and other carefully selected ingredients, offering guests an uncompromising Edo-style sushi experience.
